Flavourful Crispy Fish Tacos

Serving: Approx. 12 tacos

Time: 45 minutes

To Make Taco Dressing:

  • 1/4 cup mayo
  • 1/4 cup Greek yogurt
  • 1 tbsp cayenne pepper
  • 1 tbsp lime juice
  • 1 tbsp of finely chopped chives
  • 1/4 tsp salt
  • 1/4 tsp black pepper (if desired)

Instructions:

  1. Place all ingredients into a small bowl and well combine until mixed.
  2. Place in refrigerator until fish tacos are ready to eat.

To Make The Fish:

  • 1 cup of panko breadcrumbs
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/4 tsp ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 1/2 pounds firm white fish (Recommend cod or halibut) cut into 2-inch pieces

Instructions:

  1. Place panko onto a baking skeet lined with parchment paper.
  2. Cook in an oven preheated to 350 °F for about 5-10 minutes.
  3. Make sure to keep an eye on the panko so it doesn’t burn.
  4. Once ready place in a medium size bowl.
  5. Combine chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper to the bowl of panko and whisk together.
  6. Create your assembly line: 1. fish 2. whisked egg 3. panko mixture 4. lined sheet pan.
  7. Dip your pieces of fish in the egg, tap of excess, and then thoroughly coat in panko mix. Then gently place onto lined sheet pan. Recommend using your right hand for dry ingredients and left hand for wet ingredients.
  8. Preheated oven to 350 °F, and cook fish for approximately 10 minutes or until flaky and cooked.
  9. Place fish on plate and lightly break up the fish into slightly smaller pieces.

Assembling your Fish Tacos:

  • Follow this recipe for corn tortillas or simply buy store bought corn or flour tortillas. (12 tortillas)
  • Peel, pit and slice 2 fresh avocados.
  • finely chop 1 tomato, 1/2 cup parsley, and 1/2 cup cilantro separately.
  • slice radishes and jalapeños. (your preferred amount)

Instructions:

  1. fill your corn tortillas with a spoonful of tomatoes, cilantro, radishes and jalapeños.
  2. Then, place a large spoonful of your crispy flaked fish.
  3. Finally drizzle your taco dressing on top, garnish with parsley, and enjoy your hard work!
