INGREDIENTS
FOR PANCAKES
- 1 cup of all purpose flour
- 1/2 cup of organic oats
- 1/2 tsp cinnamon
- 2-1/2 tsp baking powder
- Pinch of salt
- 1 banana (over-ripe)
- 2 large eggs or 3 medium eggs
- 2-1/2 tbsp maple syrup
- 1 cup of almond or oat milk
- 1/2 tsp vanilla extract
- 2 tbsp of butter or margarine (melted)
- Dark chocolate chips (optional)
- 1 tsp of nutritional yeast (optional)
FOR SERVING (Optional)
- Maple syrup
- Sliced bananas
- Chocolate spread
- Confectioners’ sugar
- Seasonal fruits
INSTRUCTIONS
- In a medium size bowl, whisk together the flour, oats, cinnamon, baking powder and salt.
- In an additional small bowl, mash the banana with a fork until almost smooth. Once the banana is smooth whisk in the eggs, maple syrup, milk, vanilla extract, and melted butter.
- Once combined fold the wet mixture gently into your dry mix with a rubber spatula until blended. At this point, you can add chocolate chips if desired. Try not to over-mix your batter.
- Turn on your griddle or non-stick pan to medium heat and wait till heat is well dispersed. Once heated, you can place a small dollop of butter or oil into your pan. Then, drop about 1/4 a cup of batter onto the cooking surface. Make sure to space each pancake at least an inch apart.
- Cook on one side until most bubbles are popped and then flip each pancake when the underside is golden brown. It should take about 2 minutes on each side.
- Once cooked, using your spatula, transfer the pancakes to a plate.
- Finally, enjoy your hard work and eat your pancakes with some yummy maple syrup, chocolate sauce or an assortment of fruit.
